This is a nice matcha green tea from China with that classic strong, vegetal, umami taste and hints of both sweet and bitter in the cup. Good for sipping informally and great for non-traditional applications: baking, cooking etc. While this tea is grown and made in China; the actual tea plants themselves (the cultivar), the tea making equipment, and the matcha tea making technique are all imported from Japan.
Matcha is a unique way of making and serving tea that first developed in Japan in the 12th century. To produce matcha, they usually begin with a very high grade, shade grown, Japanese steamed green tea. Then, the finished green tea is ground into a very fine powder with a stone mortar and pestle; and stored in airtight containers. Since this ground/powdered green tea is whisked into the hot water, you end up consuming the entire leaf itself, not just drinking the steeped liquid as the leaves are thrown away (as is the case with most teas). Suggested Steeping Instruction:
Sift 1-2 tsp matcha into a cup/bowl using a small strainer. Add 2oz water around 205°. Whisk vigorously in a "W" zigzag motion, until frothy. Enjoy.
