Iron Goddess of Mercy | Oolong Tea
This is a wonderful Ti Kwan Yin style oolong tea from Fujian, China, done in the classic style. The modern style is for Ti Kwan Yin to be a little sweeter and a little greener. This tea definitely has some sweetness, but it is perfectly balanced by just a tiny bit of baking of the leaf. The aroma and steeped liquor deliver a marvelous blend of sweet and toasty with a flavor reminiscent of roasted pine nuts.
Iron Goddess of Mercy is synonymous with Ti Kwan Yin. This tea is named for the Chinese Buddhist goddess Kwan Yin, who according to legend made a gift of this tea to a poor farmer in the Anxi region of Fujian. The farmer went to great trouble and hardship to take care of Kwan Yin's temple and restore it to a place of beauty and worship. This tea was a gift for his faithfulness.
Suggested Steeping Instruction:
Use 2 heaping tsp (3-4 grams) per 8 oz of water. Steep with 8 oz water at 200° for 2-4 min. Good for multiple steepings.
