2020 Winter White Tea Cake
Big leaves with a thick skin (literally). The textured and tingling mouthfeel reveal an innate intensity. Produces a naturally rustic aroma and a warm, lively, woodsy cup for many steeps.
Originally picked in November of 2019 when the weather becomes too cold and the leaf stops growing. They select single, healthy, mature leaves for processing, not the young and tender shoots we so often swoon over. They lay them down for sun withering every day (and pulled in at night) for over a month until the actual winter comes. At that point indoor withering continues in a sunroom with a glass ceiling for 10 additional months. The tea is pressed into 300 gram packages and this style rarely makes its way outside of China. This tea was produced by Ms. Liu Zi Mei and comes from a garden on Taimu Shan, a legendary mountain where the immortals gather and serve the winter white tea.
