Golden Needle | Black Tea
Strong Yunnan black tea. The liquor is not too heavy and the aroma might even be sweet, but a blend of malty, leather, and floral characteristics makes for a darker, earthier, and a more pointed cup than years past.
Produced on September 10, 2021 in Feng Qing county, Lincang city, Yunnan. It’s a high grown (approx. 5,400 feet) one bud, two leaf pluck of local Feng Qing cultivar. The Chinese name for this tea is “Pine Needle” in reference to its deliberate needle shape.
Ingredients: black tea
4 grams | 12 oz water | 212°F | Steep 5 min.
Use 8 grams of tea in a 150ml gaiwan or teapot. Use boiling water and steep as follows:
- 10 second rinse (discard this steep)
- 1st Steep – 25 seconds
- 2nd Steep – 30 seconds
- 3rd Steep – 35 seconds
- 4th Steep – 60 seconds
- 5th Steep – 120 seconds
- (Or steep it however you want)
