Harvested May 2025 in Miyazaki prefecture, Japan. It is made from the Yabukita cultivar.

Steeping Instructions

Matcha Preparation

Sift 2 grams of matcha into a bowl to remove any clumps. Add 2 oz of 195°F (91°C) water and whisk briskly in a zig-zag motion with a bamboo whisk (chasen) until a fine layer of foam forms on the surface.

This has a slightly bitter vegetal flavor with a hint of umami in the aftertaste. As expected, it doesn't match the more expensive matcha I've had but it's much better than anything from Walmart or Amazon. I mixed it with a little bit of almond milk and it enhanced the umami while reducing the bitterness.
