TEA BASICS - The ABC's of Tea

Designed for the tea novice, this class explores all six of the major categories of tea. We will sample teas from each of those categories to demonstrate the dynamic range of flavors, and examine the different of ways they are all prepared. We will also take an in-depth look at the history of the tea industry as well as the traditional production methods and hopefully answer any and all of your tea questions.

COMPARATIVE CUPPING: OOLONG - Why Can't We All Just Get Oolong?

Oolong has the most diverse range of flavors of any tea category and is also the most complex to make. Refine your palate in this cupping workshop that focuses exclusively on these elaborate teas. You will be able to compare silky, floral oolongs with dark, woodsy oolongs, sample Chinese vs. Taiwanese varieties, and enjoy several rare oolongs that defy categorization. In between sips, learn how climate, cultivars, and processing all affect the outcome of the steep.

At TeaSource, the question we get the most is “How do I make the perfect cup of tea?” But there isn’t any single answer. In this class, we’ll be looking at all of the different ways to customize your cup. You’ll have the opportunity to sample several teas made by products ranging from t-sacs to gravity pots to gaiwans, and everything in between. When you walk out of this class, you will have found out how to brew YOUR perfect cup of tea.

There will be a wide variety of treats to sample including Lapsang Cheddar Biscuits, Earl Grey Chocolate Mousse, Roasted Chestnut Bars, and more. And of course, we will be pairing some fantastic teas to go with all of those snacks. Be sure to bring your appetite!

In this workshop, he will share his experiences as well as guide you through several tastings of black teas from the Darjeeling, Assam, and Nilgiri regions, introduce you to the teas of Bihar, and share a popular local tea beverage: milk tea.
