This sencha green tea from Shizuoka is fairly strong for a Japanese spring tea. The cup is crisp, fresh, spring-like, and a tiny bit sweet with an umami texture which provides great mouth feel.
This tea is sometimes seen as "Yutaka Midori." Both spellings are correct. Yutakamidori is the name of the cultivar used to make this tea, and is very common in Kagoshima (the southern-most tea growing region of Japan). This tea was made in Shizuoka region by a family owned tea company, Otsuka Green Tea Co., which was founded in 1869. Shizuoka is considerably further north, so this tea will taste very different than most other Yutakamidori teas you may have had in the past; a little stronger, more umami, less mineral quality to the cup.
Suggested Steeping Instruction:
Use 2 tsp (6 grams) per 8 oz of water. Steep with 8 oz water at 160-180° for 2-4 min. Good for multiple steepings.
