The earthy depths of the deep-steamed sencha. Illusions of nutmeg or chocolate vanishes into a heavy cup of green. Lively aromatics without being floral. Butterflies rather than begonias. Excellent!
A “fukamushi” (deep steam) style sencha from Kakegawa in Shizuoka prefecture. Harvested early in the 1st flush season of 2022 from the Yabukita cultivar, this tea is made in the “Shizuoka” style that originated there. The longer steam time must be carefully balanced to produce a heavier cup with umami character that does not lose it’s color (too much steaming) or become bitter and lose fragrance (not enough steaming). The particular outcome and style produced (including success or failure) will depend on the individual tea maker.
