The rare yellow tea! Meng Ding Huang Ya or “Meng Ding Yellow Bud” comes from the Meng Ding mountain of Sichuan province just outside the city of Ya’an. It’s made from the first new buds of the year in March and grows at an elevation of approximately 3,000 ft. Yellow tea is defined by allowing some oxidation prior to “kill-green” and the Meng Ding method accomplishes this by staggering the pan-firing into 3-4 stages, only removing part of the moisture each time and allowing enzyme activity to continue. In between stages the tea is wrapped into small paper packages to rest or “sweat”. The quantity and duration of these rests are the discretion and skill of the tea maker. The result creates a more powerful mouthfeel and a sweet grassiness that can turn nutty and toasty if steeped a little strong.
