Sencha Kawane | Green Tea
Affable and carefree. Effervescent mouthfeel. Light like a balloon without being weak. Zesty floral fruit in the cup but not a hint of acidity or bitterness. A great first step into Japanese tea.
A spring 2022 “nakamushi” (middle steamed) sencha from Kawane in Shizuoka prefecture. Made from the yabukita cultivar, these plants are growing at higher elevations in the mountains, which limits their sunlight and gives better drainage than the plants growing at lower elevations (not to mention a longer trip to the factory after picking). All these factors (and more) contribute to a common character for tea produced in this region – a forward sweetness and strength that has wide appeal both in Japan and in the US.
